Student publishes cookbook

BASW student (and BASW Club President) Ellyana Gomez has created a cookbook addressing food justice that was highlighted at WVU. The cookbook is featured in the Food Justice in Appalachia exhibit at WVU until June. The virtual exhibit can be found here. Gomez does have a blog/website where people can find updates about the book and even become a partner for book donations to hunger nonprofits at fulltablefullplate.com. 

"Full Table Full Plate cookbook started as an idea when I was volunteering in a food pantry" said Gomez. "There are certain items that clients always took home and some that were almost always left on the shelf either because they aren’t commonly used or clients aren’t sure what to do with them. Through other experiences in research and volunteering, I realized that there are many persistent issues in food access that mean many families rely on foods from food pantries, WIC benefits, and dollar store groceries which often mean a lack of fresh produce and limited ingredients for making full meals. This cookbook focuses on how to make the most out of whatever is in your pantry, how to create budget meals, cooking foods with little equipment in your kitchen, and making foods that are inclusive of other cultures and dietary restrictions."
